Just for fun!

I recently experimented with a new pancake recipe and I want to share!

CINNAMON PROTEIN PANCAKES

1 Egg

1 tsp Vanilla

¾ C Vanilla Unsweetened Almond Milk

¼ C Avocado Oil

Mix well and set aside.

Then combine:

¾ C Whole Wheat Flour

½ Tsp Baking Soda

1 tsp Baking Powder

1 tsp (heaping) Cinnamon

½ tsp Salt

Optional – 1/4 C chopped Walnuts or Pecans

Combine dry ingredients with wet.

Add two scoops Vanilla Protein Powder

(I prefer to use Pea Protein, but Whey will also work so long as it is Vanilla)

Heat Griddle until a drop of water sizzles on it.

Pour batter onto griddle in approx. 4” circles.

Turn when batter bubbles on top.

Serve with Greek Yogurt, Agave Nectar (or Maple Syrup) and Fruit.

These were delicious and filling. And, the added protein powder offset the carbs. I hope you’ll give it a try! Let me know!

  1. These sound delicious. Couple them with a pot of coffee and you can probably build a log cabin by supper. Haha. Really, they do sound tasty. Thanks for sharing!

    1. Lol, Parker! Maybe, with a lot of money and extra hands. How about settling for a log cabin already built, these pancakes for breakfast with that pot of coffee and a day of solitude? Oh, wait. I’m daydreaming again. Thanks for stopping by!

  2. Sounds and looks delicious, Jan! ?? Especially topped with Greek yogurt and the blueberries! I love the American pancakes, much smaller than the Swedish ones and slightly thicker but oh, so tasty! I’ll see if I can make these!

  3. Yum! I’m in the mood for pancakes. I’d have to switch out the flours though, but always looking for that perfect pancake….or waffle.

    1. If you wanted a gluten-free pancake, you could use Spelt instead of Whole Wheat. I’d have to experiment with other flours to see how they work. Thanks for stopping by!!
