
I am so excited that I get to participate in Staci Troilo’s Third Annual Cookie Exchange this year! It’s always so much fun and there are tons of fabulous recipes shared.
Here is my contribution:
Peppermint Thumbprint Cookies
Ingredients:
30 Hershey’s Candy Cane Mint Candy Kisses
1/2 Cup butter at room temperature
1 cup sugar
1 egg
1 1/2 Tsp Vanilla
2 Cups Flour
1/4 Tsp Baking Soda
1/4 tsp salt
2 TBS Peppermint Schnapps
1/4 Cup Crushed Peppermint candy
Extra sugar for rolling the dough
Instructions:
Preheat oven to 350° F. Remove all of the wrappers from the Hershey’s Kisses and set aside. In a mixer, cream together the butter and sugar. Add the egg and vanilla and mix until well blended. In another bowl, whisk together the flour, baking soda, crushed peppermint candy, and salt. Add the flour mixture alternately with the Peppermint Schnapps to the butter mixture, mixing until well blended. Line a cookie sheet with parchment paper. Shape the cookie dough into 1-inch balls. Roll the balls in the extra sugar and place them on a cookie sheet. Do not press them down. Bake for 8 to 10 minutes or until the edges of the cookies are lightly browned. Remove the cookies from the oven and let cool for 3-4 minutes. Once they are cooled, press a candy kiss into the middle of each cookie.
Note: Make sure the cookies are cooled enough that they don’t melt the candy kisses.
These are so good, and the crushed peppermint adds a bit of crunch when you bite into them.

Are any cookies better for a get-together? I especially appreciate that they aren’t chocolate–as one who can’t eat that.
That’s a hard question to answer, Jacqui. These went over great with my family and another one I could highly recommend that doesn’t have chocolate is Snickerdoodles.
